Citrus-Tea Salmon
Citrus-Tea Salmon
(2) 1 pound King Salmon fillets
1 Tbs + 1 tsp Irish Breakfast Tea
2 Tbs. dark brown sugar
1 tsp dried orange peel
1/4 tsp ginger powder
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

1 tsp lemon juice
1 egg, beaten

Directions
Preheat oven to 350 degrees F.

1. In a mortar and pestal, coarsly crush the irish breakfast tea.
2. In a small bowl mix together the crushed tea, orange peel, ginger, sugar, salt and pepper.
3. In a separate medium bowl, mix egg and lemon juice together.
4. Drench each salmon fillet in the egg mixture and place on baking pan.
5. Sprinkle the Citrus-Tea rub on each and spread evenly to coat fillets.
6. Cook in oven for 20 minutes.

Salmon sounds delicious. Good luck with your recipe. Mine won last month. The prize was a great teapot and a generous bunch or tea!

Please help me. Quite a number of years ago now, more than 10, I saw on a TV cooking show an elderly Italian? woman make a great looking fruit bread out of several rotten fruits - banana, orange, apple, pear, etc. I did not write down what she did to make it, however, it was astounding. You got a recipe for this? It took very little flour and a few spices, I think, and the rotten fruit. It was a great way to use old fruit that would certainly have been thrown out otherwise. I need a recipe. Robin.
